Syrup Season Gets an Early Start

An unusually warm winter has contributed to one of the earliest maple syrup harvests in memory.

“To be making syrup this early is the first time it’s happened that I remember,” said Stuart McLachlan of McLachlan Brothers Maple Syrup & Pancake House in Komoka. “We’ve never made 10 per cent of the crop this early before.”

He explained the sap tends to be released after freeze-thaw cycles help propel it through the trunk by barometric pressure.
